Aries‘ are independent, outgoing and assertive, but innocent and too trusting. Yet, no matter what happens as a result, Aries bounce back fast. Ruled by Mars, Aries are full of masculine energy. Women born Under Aries are forceful and aggressive which can be a problem in romance.

Male or female, Aries folks are often impulsive. They do more than they talk. They love challenges and look for them. They act first and ask questions later. That’s why they seem accident prone. And, they rarely read the recipe all the way through.  To prepare for a dinner party they may set the table before deciding on the menu, go for a bicycle ride, and then start cooking.  Here’s a suggested set of recipes for them to ignore:

Minestrone Verde    A delicious green vegetable soup for 8

1/3 cup extra virgin olive oil
1 cup of green onions, white part only, finely minced in processor
2 tablespoons fresh Italian parsley
1 cup of finely minced celery, 2 or 3 sticks
2 ounces of prosciutto, finely diced
3 pounds of assorted green vegetables (broccoli, zucchini, green beans, etc.) washed and cut up
5 cups of chicken broth
1/2 cup freshly grated Pecorino or Parmigiano cheese
1. Heat the oil in a large pot over medium heat.

2. Add the green onion, parsley, celery, and prociutto. Cook, stirring constantly 4 to 5 minutes.

3. Then add all the vegetables, stirring until they’re covered with the savory base.

4. Add broth and bring to a boil.

5. Season with salt and reduce heat to medium low. Simmer until vegetables are tender about 30 to 40 minutes.

6. Process in food processor when cool enough to handle.

Serve hot or at room temp with grated cheese for a first course.

Entrée: Cilantro Pesto with Shrimp

1. Coarsely grind lots of garlic, a handful of broken walnuts, a bunch of cilantro, salt and fresh pepper, 2 tablespoons of minced pecorino cheese, and two Serrano chilies with seeds removed.

2. Sauté a pound or so of raw shrimp in butter with minced garlic and shallots

3. Serve over angel hair pasta

You can substitute other forms of protein such as chicken thighs or fish as long as you cut them into shrimp size pieces.

Salad:

Mixed greens with dried cranberries and pistachios and dressing of your choice

Dessert:

Good vanilla ice cream. Sprinkle a teaspoon of Scotch whiskey and a teaspoon of ground espresso coffee (not cooked) on each serving.
