Blog 24: Sagittarius 11/22-12/21

Sagittarians are ruled by the Planet Jupiter which gives them a sense of adventure and optimism as well as abundance and search for learning. They love to travel and explore new philosophies of life. And they don’t want to be fenced in by anyone.

The Centaur is their astrological symbol, as well as the arrow shooting for whatever they want. The centaur with bow and arrow is depicted often. Although they lack tact in relationships and demand independence, they are loving and usually very generous.


Here goes, Freedom Lover:

Instead of appetizers:


1 and ½ cups chopped celery
1 cup diced onion
2 cloves garlic, minced
¼ cup butter
1 medium head of red cabbage, diced
4 vegetable bouillon cubes, crushed
6 cups water
2 medium potatoes peeled and quartered
1 8-oz package of low-fat cream cheese
Salt and white pepper

1. Sauté celery, onions and garlic in butter in large soup pot until tender.
2. Stir in cabbage. Continue to sauté until cabbage is limp.
3. Stir in bouillon and water. Bring to boil.
4. Add potatoes. Reduce heat, cover and simmer 20 to 30 minutes or until potatoes are fork tender.
5. Remove potatoes from soup. Mash potatoes in processor or blender.
6. Blend in cream cheese.
7. Stir into soup.
8. Cook and stir until heated through.
9. Process the soup if you want to.
10. Season to taste with salt and pepper.

Serve with crackers.

Makes 12 cups.



Entrée: Korean Beef

1. Cut into small pieces two pounds of lean beef.

2. Marinate several hours in:

1½ cup soy sauce
6 tablespoons sugar
4 tablespoons sesame oil
½ teaspoon pepper
6 green onions finely chopped
2 tablespoons sesame seeds
4 minced cloves of garlic

2. Sauté in hot frying pan with 4 or 5 thinly sliced carrots until both carrots and meat are done.

Serve with rice of your choice.




1/2 cup sliced toasted almonds
1 cup graham cracker crumbs
1/4 cup plus 2 TB’s superfine sugar
1/3 cup melted unsalted butter
1 medium sized ripe mango
2 TB’s fresh lemon juice
2 large egg whites
1/2 cup confectioners’ sugar
1 and 3/4 cups whipping cream
2 tsp. vanilla extract

1. Butter a 10 in springform pan or croute mold.

2. Combine almonds, graham cracker crumbs, 1/4 cup superfine sugar and melted butter. Blend and line pan evenly with mixture, pressing firmly

3. Bake in 375° oven for 10 minutes. Cool, place in freezer.

4. Peel mango, cut off flesh, add 2 TB’s of superfine sugar, lemon juice and puree.

5. Beat egg whites until foamy. Add 1/4 cup confectioners’ sugar, beating until stiff peaks form.

6. Beat 1 and 1/4 cup cream separately until it begins to thicken; add 1/4 cup confectioners’ sugar, beating until soft folds form.

7. Fold in egg whites and vanilla.

8. In another bowl combine 1/2 cup cream and 1/2 cup mango puree.

9. Spoon half of the vanilla cream into crust.

10. Spoon in mango cream followed by remaining vanilla cream.

11. Place in freezer for 3-4 hours.

Make the day before.

As you begin thinking about Christmas or birthday gifts, consider that the best gift you can give anyone is a snail-mailed love letter. To write one that its recipient will treasure the rest of his or her life, follow the simple directions of this recipe:

1. Quickly write a list of everything that endears this person to you. He or she could be a parent, child, cousin, friend, lover, spouse–or your boss (in extremely rare cases.)

2. Be specific. You will be writing so fast you may include traits you don’t like. That’s okay. You can cross those out later.

3. Include physical characteristics that you know your recipient likes. For example, if he has a full head of white hair that he cares about enough to have a special barber, mention his hair.

4. Add specific humorous moments in your life together, not embarrassing ones, but those that you know he or she definitely enjoyed.

5. When you have a really long list, write your first draft. Begin with a general phrase such as, “I love you,” or “Je taime, je t’adore, mon petit choux.”

6. Arrange your paragraphs from your list and end with a general phrase such as “I love you.”

7. Type, spell-check and wait a couple of days.

8. Make changes if needed, print and mail your letter in snail mail.

Congratulate yourself and then write a love letter to yourself.
