Blog 19: Virgo 8/23-9/22

Many Virgos love to cook, given the chance. Here’s a suggested recipe for a summer evening, preferably when you don’t have to go anywhere the next day. Virgos need to rest after entertaining.

Appetizers:
Cold cooked shrimp with cocktail sauce of your choice. (Or Imitation crab. I like to dip ersatz crab in a mixture of horseradish and ketchup.)

Entrée: Jar chopped salad named for the Jar restaurant in Los Angeles
For six generous portions:
¾ cup Champagne vinegar 6 tablespoons rice wine vinegar 1 and ½ cups olive oil 3 dashes of red pepper flakes 3 teaspoons dried oregano 3 teaspoons fresh thyme leaves coarse salt and fresh pepper 4 and ½ cups thinly sliced green cabbage ¾ cup thinly sliced carrots 1and ½ cups thinly slice celery ½ cup Sicilian green olives 6 oz prosciutto, thinly sliced and torn into ½ inch ribbons 3 cups thinly sliced red onion 1 and ½ cups shaved fennel 3 cups of previously roasted and cooled chicken, shredded ¾ cup crumbled feta cheese
1. Mix the Champagne vinegar, rice wine vinegar, olive oil, red pepper flakes, oregano, thyme, salt and pepper to taste.
2. Combine cabbage, carrots, celery, onion, fennel, olives, prosciutto, chicken and feta.
3. Mix well with vinaigrette.
4. Top with parsley.
All can be made in advance, and should be.
Bread of choice

Dessert: Vanilla Ice Cream with homemade Chocolate sauce
Easy chocolate sauce:
¼ cup unsweetened cocoa ¼ cup sugar 1 tablespoon butter ½ teaspoon vanilla 3 tablespoons of cream
Microwave a minute or less and whisk into sauce.
Double for extra sauce.
